Resveratrol (3-4'-5-trihydroxystilbene) is a non-flavonoid polyphenol compound with a chemical name of 3,4', 5-trihydroxy-1, 2-distyrene (3,4', 5-triamcinolone), a molecular formula ofC14H12O3 with a molecular weight of 228.25. Resveratrol pure appearance is white to pale yellow powder, tasteless, insoluble in water, soluble in ether, trichloromethane, methanol, ethanol, acetone, ethyl acetate and other organic solvents, melting point 253 to 255 degrees C, sublimation temperature of 261 degrees C. Alkaline solutions such as ammonia can show red, and iron trichloride-potassium iron cyanide can be color-rendering reaction, the use of this property can identify resveratrol.
Natural resveratrol has two structures, in nature mainly in the existence of trans-image, the two structures can be combined with glucose, forming a smooth and trans-resveratrol glycoside. Shun and trans resveratrol glycosides release resveratrol under the action of glycoside enzymes in the intestines. Trans resveratrol can be converted into a smooth isomer when exposed to ultraviolet light.
Resveratrol produces fluorescence under ultraviolet light of 366nm.
